Veggie-Loaded Summer Salad

I was craving a salad. Not just any salad. I didn't want a leafy, lettuce-y salad. I didn't want a pasta salad.

I wanted veggies. Delicious, fresh, summer veggies.

This is what happened:




A delectable mountain of veggies in a simple dressing, accompanied by a few feta crumbles. YUM. My favorite part is that the dressing doesn't overpower the salad. You still get a nice, fresh vegetable taste.

Veggie-Loaded Summer Salad
1 zucchini, sliced thin
1 yellow squash, sliced thin
1/2 sweet red pepper, chopped
1/2 green bell pepper, chopped
1&1/2 C broccoli crowns, cut up small
1/3 head of cauliflower, cut up small
cherry tomatoes, cut in half

1/2 C crumbled feta cheese

Dressing
1/4 C olive oil
1/4 C red wine vinegar
1/4 tsp dried basil (I think this salad would be super excellent with fresh!! I just didn't have any)
1/2 tsp dried oregano
1 tsp brown sugar (doesn't make the dressing sweet, just cuts the bite from the vinegar)
salt
pepper 

Wash and cut up all the veggies and combine. 
Whisk together your dressing. Pour over the veggies and toss to combine.
If the veggies still look a little dry, drizzle a little extra olive oil over the top.
Add feta crumbles and toss again.
Let sit in refrigerator overnight. This helps the flavors meld together a little better.
Toss, once more, before serving.

Super simple, tasty, and easy to customize to what you have on hand. 

Plus, it makes you feel a little bit better about eating that big, greasy cheeseburger. Right?
